Our next recipe from our Executive Chef is pork chops with mustard and sour cream sauce. Here’s a note straight from Chef Xavier on his recipe:
“Hello all, I hope all is well and that everyone is healthy and well. I hope the recipes have been good to you and that even in this time of sadness and craziness that you have found some happiness in cooking and eating good food. I will continue to send you recipes and wine suggestions as long as it takes. So, today we will venture down the path of pork, the new white meat as they call it from time to time, pork is flavorful and versatile. Now let’s get to the fun stuff.”
Ingredients
- 1/4 cup chicken stock
- 1/4 cup sour cream
- 2 tsp Dijon mustard
- 2 tsp stone ground mustard
- 1/2 tsp cornstarch
- 1 Tbsp chopped parsley
- 4 – 6 oz pork loin chops
- Salt and pepper
Directions
- In a blender, process the stock, sour cream, mustards, and cornstarch until smooth. transfer the sauce to a small saucepan and simmer over moderate heat until thickened, about 3 minutes. Stir in the parsley and keep warm.
- Heat a large skillet. Season the pork chop with salt and pepper and cook over moderately high heat until well browned, about 5 minutes. Turn the pork chops and cook until browned and just cooked through, about 3 minutes. Transfer the pork chops to a warm dinner plate. Spoon the mustard and sour cream sauce on top and serve.

“I would suggest that you serve this delicious pork chop with rice pilaf, mashed potatoes, scallop potatoes, cauliflower mash, mashed sweet potatoes, steamed broccoli, green beans, braised kale and garlic, or any other of your favorite sides. The mustardy, moist pork chops point to a big white wine. A chardonnay or light red, ideally a Pinot Noir, which would underscore the tangy flavors here.
